Sweet Pototo Brownies

I get lots of requests for this one.


SWEET POTATO BROWNIES
1 cup butter, softened
2 cups sugar
1 1/2 cups flour
1 tps salt
4 eggs
2 tps vanilla
2 cups raw grated sweet potato
1 cup chopped pecans

Preheat oven to 350. Cream butter and sugar together. Add remaining ingredients in order listed left to right, stirring after each addition. Spread batter in a greased 9x13x2 pan. Bake for 40 minutes or until a toothpick comes out clean. Spread glaze over brownies while hot. Cool before cutting. (makes 24)
GLAZE
1 cup powdered sugar
2 Tbl butter, melted
2-3 Tbl milk
Mix powdered sugar, butter (Browned is better) and enough milk to make a thin glaze. Spread over hot brownies.

Options I like;
Add;
3/4 Cup White Chocolate Chips; lightly Toast Pecans; toasted Coconut flakes!
