I lived in Maine for 10 long winters, while there I had a friend who had been married to a guy in military and stationed in Hawaii, one long cold winters day we were discussing missing warm weather and beaches and fresh air. So we had a party with a tropical theme to help get us through to spring thaw. As a treat I made several Hawaiian Dishes, these are some of the ones on the menu they really appreciated.

Huli Huli Chicken

Ingredients:

5 lbs chicken pieces
1/3 cup ketchup
1/3 cup soy sauce
1/2 cup brown sugar
3 tablespoons sherry
1 piece ginger root, crushed
1 clove garlic, crushed

Directions:

Arrange chicken, skin side up, on rack of broiler pan.
Broil 6 to 8 inches from unit in electric oven for
10 mintes on each side.
Combine remaining ingredients; baste chicken and
continue broiling for 10 more minutes on each side,
basting frequently with sauce.
Makes 8 to 10 servings.


Ono Korean Chicken (Ono means GOOD )

Ingredients:

5 lbs chicken drummetts
1 tsp. salt (optional)
1/2 cup shoyu
3/4 cup sugar
1 clove garlic, finely minced
1 skinned chili pepper or flakes (optional)
1 Tablespoon sesame seeds
1 Tablespoon sesame seed oil

Directions:

Sprinkle salt on chicken and let stand overnight.
Flour and deep fry.
Prepare sauce with rest of ingredients.
Roll hot fried chicken in sauce.
Garnish with chop green onions (optional) and serve.



Hawaiian-Style Spareribs

Yield: 4 servings

Ingredients:

1/2 cup Kikkoman Soy Sauce
1/2 cup packed brown sugar
1/2 cup chopped green onions and tops
1/4 cup tomato ketchup
1 large clove garlic, pressed
1 teaspoon grated fresh ginger root
3 pounds pork spareribs, cut into 1-rib pieces

Directions:

Combine soy sauce, brown sugar, green onions, ketchup, garlic and ginger in large bowl; add spareribs and toss to thoroughly coat pieces with sauce.

Reserving sauce, remove ribs and place, meaty side up, in 9x13-inch microwave-safe baking dish. Let stand 10 minutes.

Cover and microwave on Medium-high (70%) 16 minutes, rotating dish once.

Place ribs on grill 4 to 5 inches from medium-hot coals; brush with reserved sauce.

Cook 8 to 10 minutes, turning and brushing occasionally with sauce. (Or, place ribs on rack of broiler pan; brush with reserved sauce.

Broil 4 to 5 inches from heat source 6 minutes on each side, brushing once with remaining sauce.)
