Strawberry and Spinach Salad

I finally found a way to eat spinach and like it. I LOVED this dish. When I made it this summer, my hubby brought some over to our neighbour who hates spinach. He tasted just the spinach first and hated it... he then tasted the spinach WITH strawberries and he loved it. I found this recipe somewhere on this site (I think from b-man) and decided to try it. I don't regret it. Actually, I crave it every now and then. Being that I'm anemic, this is an absolutely terrific dish. You need vitamin C (the strawberries) to help your body absorb iron (the spinach). And I actually need the strawberries to like the spinach! LOL


Used baby spinach and sliced strawberries.

The dressing is EQUAL amounts of olive oil, granulated sugar, and red wine vinegar. (I used about 2 Tbsp of each) You just whisk until the sugar dissolves and then add to the spinach and strawberries and toss.
