Easy Grilled Sandwich

This one is very easy, very tasty and great at anytime - even during Lent!

Slice portobello mushrooms, red bell pepper rings (seed and remove veins), red onion and eggplant in 1/2-inch slices; place in glass or ceramic dish and cover with Italian dressing/viniagrette; marinate for 10 - 15minutes.

Heat your grill; grill veggies on both sides until tender; place on grilled sour dough (thick sliced), French bread, baguette or ciabatta bread; top with sliced cheese of choice and enjoy!
