Oyster Stuffing For A Turkey

I have just found one of my mothers recipe that has been used for several generations. I thought it was lost for good.

12 cups bread cubes
1/3 cup bacon grease
1/4 cup onions, chopped
1 cup celery, diced
2 Tbls. parsley, minced
1 tsp. poultry seasoning
1/2 cup butter, melted
2 cups small oysters
1 tsp. salt
1/4 tsp. black pepper

Cut bread slices into half-inch cubes; brown in the bacon grease heated in a frying pan. ( Cook celery in a little butter until softened.) mix onions and celery into bread cubes. cover and simmer 5 minutes. Add other ingredients, mixing lightly. Sufficient for a 10 pound turkey; make half the amount for a 5 pound duck or chicken.
