Default Crabmeat Au Gratin

2 Tbsp. butter
1/2 cup chopped onion
1 Tbsp. dried parsley flakes, crushed
2 Tbsp. flour
1 cup milk
1 cup shredded Cheddar cheese, divided
2 tsp. Creole Seasonings
Tabasco Hot Pepper Sauce, to taste
1 lb. lump crabmeat

Preheat the oven to 350*F.

Melt butter in medium saucepan on medium-Low heat. Add onion and parsley, cook and stir 3 minutes or until onion is tender. Add flour, cook and stir until lightly browned. Slowly stir in milk, continue cooking until mixture begins to thicken.

Stir in 1/2 cup of the cheese, Creole Seasonings and Tabasco Hot Pepper Sauce. Reduce heat to low, cook and stir until cheese is melted. Gently stir in crabmeat. Pour mixture into greased 1 qt. baking dish. Sprinkle with remaining cheese.

Bake 20-30 minutes or until mixture begins to bubble around the edges.

Default Re: Crabmeat Au Gratin

Belle, I see our taste buds are very similiar. I have a recipe that is very much the same with the exception of adding fresh shrimp. See you are from Ala., are you close to the Mobile area? Keep up the great work, it is appreciated!
