Loaded Potatoes
1 medium potato (baked)
2 eggs
1 teaspoon margarine
2 tablespoons chopped onion
2 teaspoons imitation bacon bits
Picante sauce, optional
Microwave potato on high for 5-7 minutes or oven-bake or if you?re like me - do it in the oven! Cool and scoop out the potato, leaving 1/4 inch of skin. Set aside, reserving scooped out potato. Crisp the skin in a 325° F oven for 10-15 minutes.
Scramble eggs, margarine, chopped onion, and bacon bits in a non-stick skillet until set. Mix with reserved potato and stuff the shell. Reheat if needed.
Serve with picante sauce for extra zip!
These are really easy to make - if baking potatoes, make extra for the next day.
Next day - split and scoop out pulp, crisp skin in oven and continue with recipe as stated adding scooped out taters to egg mixture to heat through.
