Strawberries in Double Cream
NOTE: Make the Creme Fraiche a day ahead!
Strawberry season will be here soon and this is something that is very good and enjoyed by all! Also makes a nice presentation! Simple to make and will compliment any meal!
2 c. fresh strawberries, cleaned, hulled, sliced
2 t. vanilla extract
¼ c. confectioners? sugar
2 T. white crème de cacao
For garnish: fresh mint sprigs
Créme Fraiche
1 pint whipping cream (2 c.)
1/2 pint sour cream (1 c.)
Prepare Créme Fraiche by whisking together whipping cream and sour cream. Cover with plastic wrap, and let stand 24 hours in a warm place. 75 degree f. temps but not over 80 f. After 24 hours put in refrigerator.
With an electric mixer, combine Créme Fraiche, vanilla, powdered sugar and Créme de Cacao - medium speed for about 2 minutes, fold in strawberries. Enjoy!!
