This cake was made by a friend of mine. Thought everyone would like the recipe.
This cake is to die for......The recipe called for strawberry gelatin but I used raspberry. It was so scrumptious.
Pretty-In-Pink Mother's Day Cake
18-1/4oz box white cake mix (Plus the addtl' ingredients as directed on package) - I used a Betty Crocker Super Moist
1 (4-serving size) box of strawberry gelatin - I used Raspberry
16oz tub vanilla frosting
12-14 pink sugar wafer cookies, crushed
Preheat oven to 350*. Grease and flour two 9-inch cake pans.
Prepare cake mix as directed for a 9-inch two-layer cake, also adding in the dry gelatin to the batter and beating until well blended. Pour batter into prepared pans and bake as directed.
Cool cakes in pans for 10 minutes, then turn out onto wire racks to cool completely.
Once cool, fill and frost cakes with vanilla frosting. Gently press the crushed cookies into the sides of the cake.
