Mini Fiesta Chicken Cups
1 pkg (24 count) square wonton wrappers
1 lb chicken breast, cooked and chopped
1 cup Hidden Valley Ranch Spicy Ranch dressing
2 cups shredded monterey jack cheese
Spray mini muffin cups with cooking spray. Place 1 wonton wrapper in each cup; bake at 350 for 5 minutes. Remove and cool.
Combine chicken, dressing and cheese in mixing bowl, blend well. Spoon a generous tablespoonful of chicken mixture into each wonton cup. Sprinkle with additional cheese if desired. Bake 8-10 minutes at 350.
Serve wth salsa and sour cream, if desired.
