Default What's for dinner?

I was alone tonight so I fixed spaghetti with meat sauce, garlic bread and a nice salad. It tasted mighty fine!

Tonight will be spicy-homemade chili w/beans on top of a layer of Frito's corn chips. Then on top of that will be..... shredded lettuce, chopped tomatoes, green onions, black olives, shredded cheddar cheese, jalepeno slices and a big dollup of sour cream! Yum!

I had some friends in for dinner tonight. I cooked the Italian oven baked chicken and spaghetti. For my first time I brined the chicken for 24 hours before proceeding with the recipe. Often the coating and skin of the chicken taste good while the meat is rather bland. Brining it made a great deal of difference. There was great flavor all the way through.

I rubbed the chicken with salt, and then added 1/4 cup salt, 4 smashed garlic cloves, 1/4 of an onion , cut into wedges, and the juice of 1/4 of an orange and a lemon. I tossed in the 1/4 of each fruit. I covered the chicken with cold water and refrigerated it for 24 hours.
