Default Easy Baking Powder Biscuits

Easy Baking Powder Biscuits

3 cups all purpose flour
1 Tablespoon baking powder
1 Tablespoon granulated sugar
1/2 teaspoon cream of tartar
1/2 teaspoon baking soda
1/2 teaspoon salt

1/2 cup vegetable oil
1/2 cup milk
1/3 cup plain yogurt
melted butter for brushing tops of biscuits

Preheat oven to 425F.

Add dry ingredients to a food processor. Pulse 5 or 10 times to mix
dry ingredients.

Pour in cooking oil, in fine stream, while pulsing food processor. Continue pulsing until mixture looks like small crumbs.

Mix milk and yogurt in measuring cup. Add milk/yogurt while pulsing food processor. Pulse until dough balls up and holds together. Add a few more tablespoons of milk, if needed.

Place dough on cutting board and knead 2 or 3 times until dough holds together. Over-kneading makes tough biscuits. Using your hands, press dough out to 1/2-inch thick sheet. Cut out biscuits with 3-inch cutter. Re-form dough scraps and cut out more biscuits until dough is gone.

Arrange biscuits on baking sheet so they are touching each other. Brush tops with melted butter. Bake at 425F for 15 to 20 minutes or until tops are slightly browned.

Makes about 12 biscuits

Using a food processor makes this recipe real easy. Because it uses vegetable oil, this dough is non-sticky and very easy to handle.
