Default Ultimate Banana Walnut Crumb Muffins

Just made a batch of these this morning for a weekend breakfast.
These are really good.


Ultimate Banana Walnut Crumb Muffins

Makes 12 standard size muffins

Ingredients:

Muffin batter

1-1/2 cups all purpose flour
1 teaspoon baking soda
1 teaspoon baking powder
1/4 teaspoon table salt

3 large ripe bananas, mashed
3/4 cup granulated sugar
1 egg, lightly beaten
1/3 cup butter, melted

Muffin Topping:

1/3 cup packed brown sugar
1 tablespoon all purpose flour
1/8 teaspoon cinnamon
1/4 cup chopped walnuts
1 tablespoon cold butter

Directions:

Preheat oven to 375-F.

In a large bowl, stir together the 1-1/2 cups of flour, baking soda, baking powder and salt.

In another bowl, mash together and stir the bananas, granulated sugar, beaten egg and 1/3 cup of melted butter until well combined.

Pour the flour mixture into the banana mixture and stir until the dry ingredients are just moistened.

Fill 12 standard muffin cups in muffin pan about 3/4 full.

In a small mixing bowl, combine the brown sugar, 1 tablespoon of flour and chopped walnuts. Mix well. Cut in the 1 tablespoon of cold butter and mix until topping is crumbly. Mixing with your fingertips seems to work best.

Sprinkle topping evenly over the uncooked muffins in muffin pan.

Bake at 375-F, on middle oven rack, for about 20 - 25 minutes (until a paring knife blade comes out clean when inserted in the center of a muffin).

Cool in pan for 10 minutes before trying to remove muffins or they may crumble.
