Default Grilled Chicken, Spinach, Red Pepper and Pepper Jack Panini

So very yummy! We love the chicken with the pounded method. Will make again!

Grilled Chicken, Spinach, Red Pepper and Pepper Jack Panini

2 boneless skinless chicken breasts
Pinch salt
Pinch pepper
2 ciabatta rolls
1 T. olive oil
2 oz. pepper jack cheese, sliced
1/2 c. baby spinach leaves
1/4 c. roasted red pepper, sliced

Pound chicken to about 1/2 inch thick, sprinkle with salt & pepper – grill. You can use your Panini press, we grilled outdoors.

Place rolls cut side down and brush tops with olive oil. Turn rolls over and from the bottom up add grilled chicken, cheese, spinach and roasted red pepper. Top with other halves and press gently to pack.

Place on Panini grill and grill 3 to 4 minutes. Serve immediately.

I make mine similar to yours. One variation we like is chicken, sun-dried tomatoes, Italian cheese (fontinella, fontina, asiago, aged provolone, etc. - whatever we have or a mix of two or more, roasted bell peppers and either lettuce, spinach, escarole (whatever greens). Sooooooo good!
