Post Pandulse (Whole Wheat Sweet Bread)

• 8 cup flour
• 6 cup warm water
• 2/3 cup xagave
• 2 table spoon wheat gluten
• 2 table spoon dough enhancer
• 3 table spoon SAF instant yeast
• ½ table spoon of Ansie seed
• 1 tea spoon cinnamon
• 1 table spoon slat
• 2 table spoon honey
• Brown sugar

Serves: 10 to 12 people.

Methods:

1. Add warm water in Bosch Universal Plus Bowl and turn on the machine. Now add the Xagave, Oil, Honey, Ansine seed and Cinnamon. Mix it well.

Note: Put the oil first and use the same cup to measure Xagave and Honey. Oil will loosen the honey and Xagave and reduce it from sticking to the cup.

3. Add 4 cups of flour little by little mixing it well.

4. Now it’s time to add Yeast, Wheat gluten and Dough enhancer.

5. Add the remaining 4 cups of flour and then the salt.

6. When everything is mixed properly, leave it aside to rest for 5 mins.

7. In the meantime coat the baking tray with Vegalene spray. I love this spray; it makes getting the bread off the tray so easy.

8. Now flour the board or any clean surface and pour the mixture. Coat the outer layer of the mixture with flour and let it rest.

9. Cut it into the pieces depending on the size of your tray. Now transfer the dough to the baking tray and flatten it using your hand. Not too much just to level the surface.

10. Best part now sprinkle the brown sugar as per your taste on the top.

11. Now put the baking trays in the plastic bags and leave it for 10 minutes leaving the yeast and dough enhances to do their work.

12. After 10 minutes you will see that the dough has fluff up a little.

13. Now put it in the oven and bake for 35 minutes and the brown sugar caramelizes turning golden brown or you will know when your kitchen is filled with fresh bread smell.
