Default Need help in finding NONFAT recipes...

I have a family member who has been diagnosed with Pancreatitis (SP??). Anyway, she has me on the hunt for recipes that are good, nonfat options. She's getting pretty tired of fresh veggies and fruits. Any ideas?

Fish or skinless chicken breasts baked in parchment with veggies and lemon slices are good choices. Also pasta with a fresh tomato sauce.

Pick up a book by Corrine Netzger - Food Counts - it will tell you everything - all fat, carbs, etc. Scroll down the zero fat foods and take it from there. Then you can find recipes for the foods they like and prepare them the way they can eat them.

A good trick for making some dishes non-fat (or very low fat) is to use non-fat silken tofu in sauces and soups. When I make a cream soup, I use non-fat milk and blend in non- or low-fat silken tofu. You can't taste it, and it gives soups and sauces a creamy texture that's impossible to get without fat otherwise.

I also make lots of healthy curries! You can make them without butter or oil if you need to, and the spices thicken the sauce and make it taste really rich and not so healthy. Add a non-fat Greek yogurt to give it a little body. Indian food --because much of it is vegetarian-- is easy to make low or non-fat. Just omit all that ghee!
