Basic oven roasted rosemary chicken, with apple juice
1 whole chicken (my chicken was approx 5 lbs)
2 tablespoons of extra virgin olive oil
1 tablespoon of ground rosemary
1 tablespoon of minced garlic
2 cups of apple juice
4 tablespoons of honey
ground white pepper and salt to taste
Garlic powder to taste (Optional)
PREP
1. Clean chicken, inside and out.
2. Preheat oven to 375-400 degrees.
3. lightly coat bottom of roasting pan with olive oil.
4. Coat chicken with extra virgin olive oil.
5. Season with rosemary, and minced garlic. (Garlic powder)
( you can place seasoning and oil under the skin as well as on top )
6. Sprinkle with salt and pepper to taste.
7. Mix applejuice and honey into a measuring cup. (heating up the mixture helps combine the honey and apple juice together)
8. Place chicken in oven.
9. After 45 minutes baste chicken with the apple juice/honey mixture.
Continue to baste chicken periodically. ( I did every 15-20 minutes, although you could probably do this less frequently )
I don't have a time to bake the chicken unfortunately because it was an experiment, but if i had to estimate I'd say It took about 2 hours.
( Credit: I found this recipe in a box from my grandmother after she passed, I tweaked it a bit, and her handwriting was difficult to read but I still thank her for it. )
Also it tastes absolutely devine with garlic mashed potatoes and corn on the cob. Got to love home cooking : )
