Zucchini Patties

2 cups shredded zucchini
1/3 cup biscuit mix
1/2 cup shredded cheddar cheese
2 tablespoon grated onion
1/2 teaspoon dried basil
1/2 teaspoon salt
1/4 teaspoon pepper
2 eggs, lightly beaten
2 tablespoon butter

In a bowl, combine first 7 ingredients, mix well. Stir in eggs,mix well. Shape into 6 patties using about 1/4 cup of zucchini mixture for each patty. In a skillet, melt butter, cook patties for 4 to 5 minutes per side or until lightly browned...4-6 servings
