SOY SAUCE CHICKEN
SOY SAUCE CHICKEN
A good dish for unexpected company - dinner can be made in an hour!
2 1/2 lb. chicken, cleaned and split in half
Vegetable oil
Salt and pepper
1 T. lemon juice - or a bit more if you would like
1 t. Worcestershire sauce
Fresh chopped parsley or a bit of dried if you prefer
1 small can sliced mushrooms, drained
Soy sauce to taste
Heat oven to 350* F. Line a shallow pan with foil. Rub both sides of chicken with oil. Combine remaining ingredients and pour over chicken, turning to coat on both sides. Cover with foil and bake for 1 hour - or until done.
Remove foil to brown a bit.
You can add flour and make a gravy, if preferred.
I usually allow 1/2 chicken per person and serve with a variety of veggies, potatoes, salad, breads, etc.
