Default Bran Muffins

Bran Muffins

1/2 cup butter
1/2 cup brown sugar
1/4 cup molasses
1 tsp vanilla
2 eggs
1 cup warm milk
1 cup flour
1-1/2 tsp baking powder
1/2 tsp baking soda
1-1/2 cups bran


Combine bran and warm milk; set aside.

Sift dry ingredients.

Cream butter and brown sugar together; add molasses and vanilla. Add eggs.

Add bran mixture to creamed mixture. Add dry ingredients and stir just until combined.

Bake in preheated oven (350F) for about 14 minutes or so.

Sometimes, I like to add 1 cup frozen blueberries, sprinkled with 1 tbsp flour, to the batter, or add raisins.

Default Bran Muffins

Thanks for this recipe, Aline
not only do I love bran muffins,
they're a plesant way to get our
fiber! Don't know if you know
but in place of bran you can sub-
stitute rasin bran cereal. A com-
ination works well too but with
the cereal, I've found the muffins
come out a little less grainy for
those who like a softer texture.
I'll try your recipe and let you
know what my family thinks

Hi Noel! Your welcome. I don't like it "grainy" either that's why I like this recipe. You soak your bran in the warm milk and set it aside while you get the rest of your ingredients together. The bran softens up which gives the muffin a softer texter. Hope you enjoy!

Muffins were very good. All loved them. I added blueberries that I put up this summer. The recipe made 12 muffins and took 30 minutes to cook.

I will definitely put them on my list of " make again."
