Copycat Boston Market Dill Potato Wedges

One of my favorite things about Boston Market are their delicious side dishes. Many have requested this recipe, and now you can make these dill potatoes at home.

8 red potatoes
2 cloves garlic, minced fine
1/4 pound butter
1/2 teaspoon salt
1/2 teaspoon black pepper
1/2 teaspoon celery salt
2 tsp. dried dill weed

Wash potatoes well and boil until barely soft. Drain, and cut potatoes in wedges. Melt 1 stick of butter, in large frying pan and saute garlic for about one minute. Do not burn the garlic!
Add potatoes and the rest of the seasonings. Toss the potatoes in the butter until they are coated. Then serve.

    I’ve seen copy-cat recipes for boston market garlic-dill potatoes before and almost all of them involve browning them in some way. The joy of the boston market potatoes is that:

    1 – they are a low-fat option (3 grams of total fat, 1 gram of saturated fat, no trans fat). they do not include 1/4 pound of butter.

    2 – they are not browned at all. they are steamed and tossed with margarine/butter blend and the seasonings.

    If you cut way back on the butter and just lightly toss the boiled potatoes with no further cooking, you’ll end up with a result much closer to the original.

    I have made these often. Boil the potatoes, mix 1/4 cup extra virgin olive oil with 1/4 cup butter and 2 tbl. of the water the potatoes were boiled in. Add some fresh parsley to the other ingredients. The addition of the olive oil and the small amount of water extends the “butter sauce” and you will never know the difference. It is still not LOW fat, but it is a little healthier.
