KFC(tm) Chicken Pot Pie

Today’s secret recipe (below) will show you how to make KFC’s chicken pot pie.  Tender pieces of chicken, diced potatoes, green peas and carrots in a savory sauce.  Covered with a flaky, buttery crust and baked to golden perfection.  This classic dish never goes out of style.

This home-style dish is a great way to make use of leftovers from a previous nights chicken dinner.  I like to make a few of these and freeze them for an easy weeknight meal.

KFC(tm) Chicken Pot Pie

2 Potatoes, peeled and cooked
2/3 cup frozen Peas
2 cans Cream of Chicken Soup
2 Carrots, peeled and cooked
2 tablespoons frozen onion
2 cups of cooked Chicken
1 dash each Salt and Pepper
1 dash MSG
1 can of Biscuits or homemade biscuit dough
Butter

In a bowl combine all cooked vegetables and chicken.

Add the cream of chicken soup and seasoning. The mixture should be thick but not too thick. If the mixture is too thick, add some milk to the mixture.

Scoop the mixture into individual pie pans.

Use the biscuits to make the crust.

Roll out the biscuit dough thin and place on top.

Brush dough with butter.

Bake in a 375 F oven for 15 to 25 minutes or until it is heated through and the crust is golden brown.

KFC Potato Wedges

Today’s secret recipe (below) is for my favorite side dish from KFC.  These delicious potato wedges are crispy on the outside and tender in the middle.  Seasoned to perfection with KFC’s signature blend of seasonings.  Once you try them for yourself you will agree they’re completely irresistible.

KFC Potato Wedges

shortening (for frying)
5 baking potatoes, cut into wedges
1 cup milk
1 egg
1 cup flour
2 tablespoons salt
1 teaspoon pepper
1/2 teaspoon msg
1/4 teaspoon paprika
1 dash garlic powder

Preheat shortening to 375°F.

Cut the potatoes into 16 to 18 equal size wedges.

Mix the egg and milk till well blended in a big bowl.

Mix the dry ingredients into a large bowl.

Put some potatoes in the milk and egg then into the flour mixture till well coated.

Fry in fryer for 3 minutes, remove from the oil and allow them to sit for one minute and then cook them again for 5 minutes or until cooked.

Serves 4-6

Copycat KFC Bean Salad

Three bean salad with a slightly sweet dressing.

1 can (16 oz.) green beans
1 can (16 oz.) wax beans
1 can (16 oz.) kidney beans
1 medium green pepper, sliced and chopped
1 medium-sized white onion sliced and cut up
1/2 cup vegetable oil
1/2 cup cider vinegar
3/4 cup sugar
1 1/2 teaspoons salt
1/2 teaspoon black pepper

Drain green and wax beans; place in bowl. Drain and rinse kidney beans; add to bowl; add pepper and onion.

In separate bowl, combine vinegar and sugar; whisk to dissolve sugar; add oil, salt and pepper; pour over beans; toss to coat. Cover and refrigerate overnight to allow flavors to meld. This will last 3 to 4 days and tastes better after 2 days.

Copycat KFC Coleslaw

This semi-sweet slaw goes well with fried chicken, fish, or even sandwiches.

4 1/2 teaspoons tarragon vinegar
6 1/2 tablespoons vegetable oil
3/4 cup chopped onions
2 1/2 cups Miracle Whip
1 cup sugar
2 carrots, finely chopped
2 heads cabbage, finely chopped

1. In bowl, combine oil, onions and sugar; add tarragon vinegar; fold in mayonnaise.
2. In large bowl, combine carrots and cabbage, mix well.
3. Pour dressing over cabbage mix; stir well to combine.
4. Cover and refrigerate overnight.
Serves 8
