Garlic Shrimp

I have some fantastic new quick and easy recipes to make your weekend dinners a snap to prepare.  All of these recipes (listed below) are bursting with flavor and can be made in about 30 minutes.  First I have a secret recipe for a low carb garlic shrimp dish.  For a complete meal serve your garlic shrimp with a fresh salad on the side.

New Secret Recipe

Garlic Shrimp

1/2 cup olive oil
4 garlic cloves, finely chopped
2 hot fresh red chilies, seeded and finely chopped
1 lb cooked jumbo shrimp
2 Tbs chopped fresh flatleaf parsley
salt and pepper
lemon wedges, to garnish

Heat the oil in a heavy-bottom skillet over low heat. Add the garlic and chilies and cook, stirring occasionally, for 1-2 minutes, or until softened but not colored.

Add the shrimp and stir-fry for 2-3 minutes, or until heated through and coated in the oil and garlic mixture.

Turn off the heat and add the chopped parsley, stirring well to mix. Season to taste with salt and pepper.

Divide the shrimp and garlic-flavored oil between warmed serving dishes. Garnish with lemon wedges and serve.

P.F. Chang’s(™) Shrimp Fried Rice

1/4 teaspoon fine ground mustard
1/4 teaspoon minced ginger
1/2 teaspoon minced or crushed garlic
1 teaspoon molasses
1 1/2 teaspoon lite soy sauce (more added at table as desired)
non-stick cooking spray
1/3 cup egg substitute
Salt and pepper, to taste (optional)
4 teaspoons canola oil
1 1/2 cup tail-off cooked large shrimp from frozen, packed
3/4 cup petite green peas, frozen (or bean sprouts)
3/4 cup baby carrots, cut into matchstick or thin strips
2 cups steamed rice
3 green onions, chopped (use only white part or white plus some of the green if desired)

In a small bowl or cup, blend mustard, ginger, garlic and molasses. Stir in soy sauce and set aside.

Heat a large, nonstick frying pan or skillet over medium heat. Spray center generously with canola cooking spray. Pour egg substitute in the middle of pan and tilt to spread egg out. Sprinkle salt and pepper over the top if desired. Once the underside is lightly browned, flip egg over and cook about a minute longer or until bottom is lightly browned. Cut into small pieces with knife and set aside.

Spray more canola oil into pan and heat over medium heat. Add shrimp and let sizzle for about a minute. Add peas and carrots and stir-fry, tossing occasionally, for about 2 minutes or until shrimp is warmed throughout. Add steamed rice, stir and let cook about a minute. Drizzle the soy-sauce mixture over the top of rice mixture, stir, and let cook another minute or two. Turn off heat and stir in green onion and pieces of egg. Serve, offering additional soy sauce at the table, if desired.

Bonefish Grill(™) Saucy Shrimp

My local supermarket had an amazing sale this week on jumbo shrimp which is perfect for today’s secret recipe.  At Bonefish Grill they serve a delicious saucy shrimp appetizer.  Sautéed shrimp in a creamy lime, tomato, garlic sauce with kalamata olives and topped with feta cheese.  This dish combines so many vibrant flavors.  You could easily turn this into an entree by serving it with pasta or rice.

Bonefish Grill(™) Saucy Shrimp

2 tablespoons butter divided
1 tablespoon olive oil
1 pound shrimp peeled and deveined
6 cloves garlic minced
1 tablespoon heaping tomato paste
3/4 cup clam juice
1/2 teaspoon ground white pepper
1/2 teaspoon salt
1 tablespoon sugar
1 tablespoon fresh lime juice
3/4 cup heavy cream
1/2 cup sliced sun-dried tomatoes
1/3 cup chopped kalamata olives
1/2 cup crumbled feta cheese

Heat 1 tablespoon butter and the oil in a nonstick pan over medium-high heat.

Season shrimp with salt and black pepper and place in pan.

Cook just until pink on both sides and remove from pan and set aside.

At this point they should be somewhat undercooked because they will finish cooking in the sauce.

Careful not to overcook them or they will get rubbery.

Add remaining tablespoon of butter to pan along with garlic.

Cook garlic for 1 minute.

Add tomato paste and clam juice.

Stir to mix tomato paste into clam juice.

Let simmer for 1-2 minutes.

Add white pepper, salt, sugar, lime juice, cream, and sun-dried tomatoes.

Simmer 2 to 3 minutes.

Return shrimp to pan and add olives.

Cook just long enough to cook shrimp through (just a minute or 2)

Crumble feta cheese on top and serve.

Olive Garden(tm) Baked Parmesan Shrimp

Today’s secret recipe for Olive Garden’s(tm) baked Parmesan shrimp has a great presentation and is incredibly easy to prepare.  This dish combines tender shrimp with a creamy Parmesan sauce and is topped with cheesy breadcrumbs and fresh chopped tomatoes.  Serve with penne pasta (or your favorite variety) and some garlic bread.

Olive Garden(tm) Baked Parmesan Shrimp

8 ounces pasta cooked according to package directions
4 ounces butter
1 pint heavy cream
8 ounces Parmesan cheese
8 ounces cooked shrimp peeled and deviened
1 Roma tomato cut into small pieces
2 teaspoons fresh chopped parsley

Optional
2 tablespoons bread crumbs
2 teaspoons Parmesan cheese
1 tablespoon melted butter

Preheat oven to 350 degrees. In a medium size saucepan combine butter and heavy cream. Heat until butter is melted completely and the mixture comes to a simmer. Add Parmesan cheese into pot and stir until melted. Season with salt and white pepper if desired. Place cooked pasta in bowl, and stir in sauce, mix to coat pasta evenly. Pour pasta into 2 or 3 small casserole dishes.

Optional step – Bread Crumbs

Combine bread crumbs, melted butter, and Parmesan cheese in a bowl. Stir to coat bread crumbs.

Sprinkle bread crumbs (if desired) onto casserole dish, place several pieces of shrimp onto casserole, and place in the oven. Bake until all is heated through.

Garnish with chopped tomatoes and parsley if desired.
