Light Parsleyed Potatoes
Prep: 10 min, Cook: 15 min.

* 4 russet potatoes, peeled and cut into eighths
* 1/4 cup parsley, finely chopped
* 1 Tbs. unsalted butter
* 1/4 tsp. salt (optional), or to taste

Cover potatoes with salted water in a heavy saucepan and bring to a boil. Reduce heat to low. Cover and simmer 15-20 minutes or until potatoes are tender. Drain water. Stir in remaining ingredients and toss
