View Full Version : Unstuffed Stuffed Cabbage Casserole

2 lbs ground beef
2 medium onions, chopped
1 small clove garlic
1 cup raw rice
1 cup V-8 juice
1 small head cabbage, shredded
3 cups V-8 juice
1 jar sauerkraut

Cook and drain ground beef. Add onion; cook 1 minute. Add rice and first amount of juice.

Wash and drain sauerkraut.

Put shredded cabbage in 9x13-inch pan. Add 1/2 ground beef mixture, a layer of sauerkraut, rest of beef mixture on top. Pour 3 cups V-8 juice on top.

Bake at 350 F for 2 hours, covered with foil.

FYI... V-8 Juice is a juice blend made from 8 different vegetables that is sold at supermarkets.
