(4 to 6 servings)

6 ears of corn
2 tablespoons butter
2 scallions, trimmed and sliced
2 tablespoons chopped green pepper
1 large tomato, peeled and finely chopped
Salt and freshly ground pepper to taste

Cut the corn kernels from the cobs. Heat 1 tablespoon of the butter and add the corn, scallions and green pepper. Cook for 3 minutes.

Add the tomato, salt and pepper. Cover and cook for 5 minutes, or until corn is tender. Stir in remaining butter and serve.
