Herb Butter for pork, beef, etc.

1 1/2 sticks butter
2 T. Dijon mustard
1 T. chopped shallots
1 T. chopped fresh tarragon (or 1 t. dried)
2 T. chopped fresh chives
Kosher salt and fresh ground black pepper, to taste

Soften butter; mix in remaining ingredients; re-chill; keep cold until ready to use.
