Pan Fried Caribou in a Green Peppercorn Sauce

• medallions of caribou
• flour
• butter
• shallots
• chopped parsley
• green peppercorns salt
• asbach brandy
• veal stock

Heat pan with a little butter, flour medallions. Sauté shallots until transparent, add caribou, sauté until golden brown and turn over. Lightly salt de-glaze with asbach, add veal stock. Remove meat from pan. Reduce until desired consistency. Spoon sauce over caribou.
