Fried Green Tomatoes with Ramoulade sauce

Recipe from Chef Delilah Winder, "Bluezette", Philadelphia, PA

2 green tomatoes
1/2 cup of flour
1/2 cup of buttermilk
salt and pepper to taste
1/2 cup of canola oil

Slice tomatoes 1/2-inch thick.
Place tomatoes in buttermilk.
Mix flour, salt, and pepper together.
Dredge tomatoes in flour mixture and knock off all excess flour.
Heat oil to 350 degrees.
Fry till golden brown (approx. 3-5 minutes)

Ramoulade for Fried Green Tomatoes:

1 cup mayonnaise
1/4 cup relish
tsp. cayenne pepper
1/2 tsp. fresh dry oregano
1/2 tsp. thyme
1 tsp. paprika
1 tsp. ketchup
1 tbsp. Tabasco hot sauce
1 tbsp. Creole mustard
5 hard-boiled eggs

Grate hard-boiled eggs, then mix all of the above ingredients. Add salt and
pepper to taste.
