Black Angus Cookies

1 1/4 cup bittersweet chocolate, chopped
1 stick butter
1/4 cup flour
1/4 tsp. baking powder
1/2 tsp. salt
3 eggs
1 1/4 cup sugar
1 1/4 Tbsps. espresso grounds
1 1/4 Tbsps. vanilla
1 1/2 cups chocolate chips
1 cup pecan pieces

Melt together in a microwave the bittersweet chocolate and butter, stirring every 30 seconds.

Cream together eggs, sugar and espresso grounds; then add to chocolate mixture and mix until blended.

Sift together flour baking powder and salt, then add to the batter. Fold in chips and nuts.

Bake on ungreased cookie sheet at 350 for 9-10 minutes (use upper rack); remove from oven before center is set. Cookies will firm as they cool.

Black Angus Cookies

5 (1-oz.) squares unsweetened chocolate
4 2/3 cups (28 oz.) semisweet chocolate chips, divided
1/2 lb (2 sticks) butter
1 3/4 cups chopped walnuts
1 3/4 cups chopped pecans
2/3 cups flour
1 tsp. baking powder
1 1/2 tsp. salt
5 eggs
2 cups sugar
1 tbsp instant coffee powder
2 tsp vanilla

Melt the unsweetened chocolate, 2 2/3 cups of the chocolate chips and the butter together in a double boiler. Cool slightly but keep warm. Toast the walnuts and pecans and set aside to cool. Mix the flour, baking powder and salt; set aside.

In a bowl, beat the eggs, sugar, instant coffee and vanilla with an electric mixer for about 2 minutes.

Mix the remaining 2 cups chocolate chips with the cooled nuts; set aside.

Add melted chocolate mixture to egg mixture, then add flour mixture, then stir in nut mixture. Cool in the refrigerator for 30 minutes.

Preheat oven to 350 degrees. Drop cookies, using a 1/8-cup measure, onto a greased cookie sheet. Bake 10 to 12 minutes. Let cool on cookie sheet. Makes 5 1/2 dozen.

Each cookie contains approximately 1 other carb. exch., 2 1/2 fat exch.; 160 calories, 16 gm. carbohydrate, 2 gm. protein, 12 gm. fat (including 5 gm. sat. fat), 24 mg. cholesterol, 85 mg. sodium, 16 mg. calcium and 1 gm. dietary fiber.
