Victoria Burton's West Indies Peanut Punch

Serves about 20

5 to 6 cups water

28-ounce jar creamy peanut butter

2 14-ounce cans sweetened condensed milk

About 3 tablespoons almond extract

About 3/4 cup light rum


1. Bring water to a boil. Stir in peanut butter until thoroughly mixed. Remove from heat and cool.

2. Strain the peanut-water mixture through a fine-mesh strainer 4 or 5 times. Stir in sweetened condensed milk, almond extract and rum. Add water to reach desired consistency. Adjust almond extract and rum to taste. Chill and serve over plenty of ice. Keeps for months in the refrigerator.
