Angel Hair with Asparagus and Dried Tomatoes


•1 1/2 pounds thin asparagus spears
•20 dried tomatoes, cut in half
•2 to 3 tablespoons extra-virgin olive oil
•1/4 cup chopped walnuts
•1 to 2 teaspoons Italian seasoning
•Salt and freshly ground pepper to taste
•1 pound dry angel hair or wheat-free pasta
•Freshly grated Parmesan cheese or nondairy alternative

1.Cut off bottom inch of each asparagus spear. Chop each spear diagonally into 3 pieces. Put dried tomatoes in a large pot of boiling water; boil 2 minutes. Add asparagus; boil 3 minutes.
2.Meanwhile, in a large bowl combine olive oil, walnuts, Italian seasoning, salt and pepper. Add pasta to pot of asparagus. Boil 1 minute or until pasta is tender but still firm to the bite.
3.Drain pasta and vegetables; transfer pasta and vegetables to bowl of seasoning mixture. Toss well. Taste and adjust seasoning. Sprinkle with Parmesan. Serve immediately. Makes 6 servings.
