Zucchini Casserole

3 cups soft bread crumbs
1 tsp. dried oregano
1/4 cup melted butter
4 cups thinly sliced zucchini
3 cups sliced Roma tomatoes
1 med. onion finely diced
1/2 cup finely diced green pepper
1 tsp. salt
1/2 tsp black pepper
2 cups grated sharp cheddar cheese

Combine bread crumbs, oregano and butter. In 1 1/2 quart casserole
layer half of the vegetables and sprinkle with salt and pepper. Layer half of the cheese and bread crumbs. Repeat layers ending with bread crumbs. Cover and bake at 350 degrees for 1 hours. Remove cover and bake until crumbs are browned - 15 to 20 minutes.
