Pineapple Sour Cream Nut Bread

2 c. sifted flour
1 tsp. salt
3/4 tsp. baking soda
1 egg, well beaten
1 c. sugar
3/4 c. sour cream
1 8-oz. can crushed pineapple, drained (retain juice)
1 T. juice from above pineapple
1 c. chopped nuts
1/2 c. shredded coconut (optional)

Combine flour, salt and soda; set aside. Beat egg, and stir in sugar. Stir in sour cream, pineapple and 1 T. juice. Blend in flour mixture. Add nuts and coconut. Turn into well-greased 9" X 5" X 3" loaf pan. Place in COLD oven. Turn heat to 350 and bake about 75 minutes or until done. Let stand in pan 5 minutes, then turn out onto rack to cool. Freeze if desired.
