Makes cup

8 ounces small to medium strawberries

2 tablespoons maple syrup

1 tablespoon extra-virgin olive oil

1/4 teaspoon fine-grain sea salt

1 tablespoon port wine

A few drops balsamic vinegar

1. Preheat oven to 350 degrees. Line a rimmed baking sheet or large baking dish with parchment. (The rim prevents the juices from running off the sheet.)

2. Cut each strawberry in half (or quarters, if berries are large). Place in a mixing bowl.

3. Whisk together the maple syrup, olive oil and salt. Pour over strawberries and toss gently toss to coat.

4. Arrange berries in a single layer on the pan. Roast for about 40 minutes -- long enough for juices to thicken but not burn. Watch the edges of the pan in particular.

5. Scrape the still-warm berries and juices into a bowl. Stir in the port and balsamic vinegar. Use immediately or let cool and store in the refrigerator for up to a week.
