Mom's BBQ Beef Sammies

Boneless Chuck roast
1 c barbecue sauce
1/2 c apricot preserves
2 Tbsp red or green bell pepper-- chopped
1 Tbsp Dijon mustard
2 tsp brown sugar -- packed
1 small onion -- sliced

Throw it all in the crockpot on low for 7-8 hours, remove the roast, cut it into slices and then put back into the sauce for 20 mins on high.

Those are some simple BBQ beef sandwiches. Apricot preserves is something I use often when making BBQ.

I like using the apricot or peach preserves alot too
