Edina's Arrezo Ristorante Grilled Salmon Alla Forno with Spaghetti Squash & Snap Peas
4 8 oz salmon filet
2 small spaghetti squash
1 lb sugar snap peas
1 lemon
2 T unsalted butter
Salt and pepper to taste
Preheat oven to 350 for squash
Cut squash in half and remove seeds
Season inside of squash with olive oil, salt and pepper
Bake for about 50 minutes
After the squash cools down enough to handle, scape out the inside with a fork. This will create pasta looking shreds.
Saute sugar snap peas in fry pan or grill on stove for 5-6 minutes with butter or until tender.
Procedure for salmon.
Preheat grill and clean grates with a paper towel.
Season salmon with olive oil, salt and pepper.
Grill side down for 5 minutes.
Flip salmon and for 3 more minutes on 2nd side with temperature thermometer to 145 degrees.
Serve and enjoy with a squeeze of lemon and melted butter on the salmon.
