Coffee Steak Butter



1 tablespoon fennel seeds

1 tablespoon coriander seeds

1 tablespoon cumin seeds

1 tablespoon mustard seeds

1 each bay leaves

.5 tablespoons black peppercorn

1 each star anise seeds

Method:

1. In a medium-sized sauté pan toast all the seeds until golden brown.

2. Let it cool down.

3. Grind the spices with a spice grinder.

1 lb. unsalted butter

.5 cup dark roast coffee

.25 cup freshly parsley, chopped

Kosher salt to taste

Method:

1. Place the butter in mixing bowl and whip.

2. Add the all the spices and coffee and combine until well combined.

3. Add the parsley and kosher salt to taste.

Tips for great steaks

1. Season the steak with salt and pepper well in advance. The seasoning will penetrate the meat and give it better flavor throughout.

2. Before you sear or grill the meat dry the surface off with a paper towel. This will give you a better crust.

3. To finish the cooking cook the steaks at a lower temperature to let it cook more evenly. When the steak is cooked to your liking, let it sit at room temperature for a few minutes. A rested steak will be juicier and more flavorful.
