Vegetable Bake


Number of Servings: 2
Serving Size: 1/2 recipe

Ingredients:

frozen mixed vegetables, thawed - 1 1/2 cups
flour - 2 tbsp
low-calorie margarine - 1 tbsp
fat-free milk - 1/4 cup
Parmesan cheese - 1 tbsp
hot mashed potatoes (instant or leftover) - 1 cup
paprika - dash

1. Heat oven to 350 degrees F. Mix vegetables and flour in a small nonstick casserole dish ( or spray glass dish with nonstick cooking spray).

2. Melt margarine in a small saucepan and add milk and cheese. Pour hot liquid over vegetables. Top with mashed potatoes, spreading evenly. Sprinkle with paprika.

3. Bake 25-30 minutes or until potatoes slightly brown.
