SPLENDA FRESH FRUIT MOLD WITH GINGER CREAM FROSTING

2 packages unsweetened gelatin
1/2 cup apple juice
2 1/2 cups unsweetened pineapple juice
1/2 cup SPLENDA® No Calorie Sweetener, Granular
2 cups sliced strawberries
1 Granny Smith apple, cored and thinly sliced
1 grapefruit, peeled and sectioned
1 cup blueberries 1 (15-ounce) can unsweetened pineapple chunks, drained
Lettuce leaves

Ginger Cream Dressing
1/2 cup light sour cream
2 tablespoons light mayonnaise
1 tablespoon SPLENDA® No Calorie Sweetener, Granular
1/2 teaspoon grated fresh ginger


SPRINKLE gelatin over apple juice in a small saucepan; let stand 1 minute. Add pineapple juice and SPLENDA® Granular; cook over low heat, stirring until gelatin dissolves (about 2 minutes).

CHILL mixture until the consistency of unbeaten egg white. Add fruit, stirring gently. Pour mixture into a lightly oiled 2 quart mold; cover and chill until firm, about 4 to 6 hours. Unmold on lettuce leaves.

COMBINE all Ginger Cream Dressing ingredients, stirring well. Serve with unmolded salad.
