Chiles Rellenos Quiche

Serves/Yields: 3 large servings - can easily be doubled

Cooking spray1 (4 oz) can
diced green chiles,
drained1 cup shredded
sharp Cheddar1/2 cup
shredded Jack cheese with
1 cup cream1 cup
water1/2 cup Atkins (or
other) LC baking mix2
large eggs, lightly
beaten1/2 cup ricotta

Preheat oven to 350. Coat a square baking dish with cooking spray. Sprinkle chiles and cheeses evenly into dish. Beat cream, water, baking mix, and eggs at low speed with electric mixer til smooth. Stir in ricotta
cheese. Pour egg mixture over chiles and cheeses in baking dish. Bake,
uncovered, at 350 for 30-40 minutes or til a knife inserted in the
center comes out clean. Let stand 10 minutes before cutting.
