Zucchini Muffins

Serves/Yields: 14

Ingredients
5 large eggs
1/4 cup canola oil
1/2 cup onion -- finely chopped
3/4 cup Sharp cheddar cheese -- grated
4 slices bacon -- crisp & crumbled
2 3/4 cups zucchini -- grated
1/4 cup Hodgson Mill Soy Flour -- or your choice
1/2 cup whole wheat flour
1 teaspoon baking powder
1/4 teaspoon salt

Directions
Oven preheated to 350 degrees. -In a large bowl, beat the eggs;add the next five ingredients; stir together well. -Add the flours, baking powder & salt,stir to combine. -Filled the greased muffin pans almost full. -Bake @ 350 degrees for about 30 minutes. -Remove from pan & cool on a wire rack.
