* 1 7-oz. pkg. of unsweetened grated coconut
* 1 pkg sugar-free gelatin mix (small box - your flavor choice)
(Use Cottee's <> gelatin to avoid the aspartame in Jello <> gelatin if possible
Cottee's <> can be ordered online at The Low Carb Connoisseur.)
* 1 cup almond flour/ground almonds
* 1/2 cup heavy cream
* 4-8 pkts Splenda® (depending on your sweetness preference)
* 1/2 teaspoon vanilla extract
* 1/2 teaspoon almond extract

Combine all ingredients. Shape into designs with candy molds (like fruits or veggies etc. - you may add food coloring for truer details if gelatin does not color to preference,) or form into simple circles. Chill until forms hold their shape.

Makes 24 1-inch forms - 4 carbs per piece.
