Sautéed Baby Spinach

(makes 4 servings)

olive oil cooking spray
2 scallions, white and 1 inch (2.5 cm) green, chopped
1 clove garlic, minced
1 pound (480 g) baby spinach, washed well

1. Coat a large nonstick skillet with cooking spray. Add the scallion and garlic. Sauté for 1 minute.
2. Add the spinach and sauté until the spinach is wilted. Serve immediately.
