Maple Syrup
1 tablespoon maple extract
2 cups water
24 packets sweetener (such as Sweet 'n Low)
24 packets Splenda
1/2 teaspoon guar gum (thickening agent, found in health food stores)
Heat water with sweeteners and extract until boiling.
Remove from heat and stir in guar gum to thicken. Cool and store in refrigerator.
Recipe makes 32-tablespoons at 0 .8 carbs each.
Note:
Guar gum clumps easily. Stir in 1/8-teaspoon at a time and whisk very well after each addition to avoid clumping.

I have made this recipe from an old camping cookbook several times and it has never failed to surprise me how much it taste like real Maple Syrup
1 quart Water
3-4 potates, peeled
1 cup White Sugar
1 cup Brown sugar
Cook peeled potates in water with no salt or pepper or other spices. reserve water and use potaotes as you wish
To reserved water add the sugars and allow to disolve totaly and mix well. Place in capped jar or bottle and store in dark place one or two days, the more time stored the better the end taste.
When opened the mixture will have the taste of maple syrup and you will be hard pressed to tell the difference in it and store bought Mayple type syrup. Most store syrup is sugar water with artificial maple flavor you know.
