Garlic Mashed Potatoes
Garlic Mashed Potatoes
4 servings (serving size: 3/4 cup)
1 1/2 pounds cubed, unpeeled red potatoes
3 garlic cloves, peeled and thinly sliced
1/2 cup 1% low-fat milk
2 tablespoons butter
3/4 teaspoon salt
1/4 teaspoon black pepper
1. Place potatoes and garlic in a large saucepan; cover with cold water, and bring to a boil over high heat. Reduce heat; simmer, uncovered, until potatoes are tender when pierced with a knife (about 20 minutes). Drain; return to pot over low heat.
2. Add milk, butter, salt, and pepper. Mash potatoes with a potato masher to desired consistency.

These were awesome! I did a couple things diff, I used salt sub and used minced garlic lots of it
love my garlic!

I like it much well it's Ok, now that you have hit two of my weaknesses, potatoes and garlic! I really got to start buying fresh garlic. In garlic powder will not do the same, right?

I only use garlic powder in a recipe when it's something where the fresh garlic might burn, otherwise it's fresh garlic for me. Nothing like it!

I had a recipe last year that it was necessary to cook the potatoes with half and half and sautéed with garlic and butter. The potatoes were left undrained and mashed potatoes in the same half and half, which was prepared Unfortunately, I can not find a recipe for this year. You know what I mean.

My husband is a diabetic and has been told NOT to eat potatoes. He LOVES potatoes and so as a treat I will fix him Garlic Mashed Potatoes about once a month. I actually like to dice up about half an onion and cook in the water with the potatoes and garlic.

I am a retired Registered Nurse. I thought it was odd that your husband was told not to eat potatoes, so I googled and I copied this from the American Diabetes Association website.
Myth: If you have diabetes, you should only eat small amounts of starchy foods, such as bread, potatoes and pasta.
Fact: Starchy foods are part of a healthy meal plan. What is important is the portion size. Whole grain breads, cereals, pasta, rice and starchy vegetables like potatoes, yams, peas and corn can be included in your meals and snacks. The key is portions. For most people with diabetes, having 3-4 servings of carbohydrate-containing foods is about right. Whole grain starchy foods are also a good source of fiber, which helps keep your gut healthy
