Stuffed Peppers, Stuffed Zucchini

* 2 lb of long grain parboil rice
* 1 lb of 80-20% ground beef
* 1 teaspoon of salt
* 1 teaspoon of black pepper
* 1/2 teaspoon of allspice
* 1/4 teaspoon of cumin
* 1/4 teaspoon of oregano
* 1/4 teaspoon of dried mint
* 1 cup of tomato sauce
* 1 cup of lemon juice.

Mix all the ingredients together and let the mixture simmer for one hour.

Remove the inside from several baby zucchini. Remove the stem from some red and green peppers.

Stuff all the vegetables with the mixture.

Add 1 cup of water and let it cook for 45 minutes on medium.
