Dear Abby's Mama's Chicken Soup

4 lbs. stewing chicken, cut into pieces
4 quarts water
2 medium onions, peeled
3 medium carrots, skin and all, cut in thirds
1/3 cup chopped fresh parsley
1 tablespoon salt
2 bay leaves
Dash black pepper

In large stockpot, combine chicken and water. Cover and bring to a boil. Reduce heat; cover and simmer 15 minutes. Skim off any scum that rises to surface. Add remaining ingredients. Simmer, loosely covered, 1 to 1-1/2 hours or until chicken is very tender.

Remove chicken from broth. Strain the liquid and discard the vegetables. Remove chicken from bones; cut into bite-size pieces. Return chicken to broth.
