Creamy Country-Style Chicken Strips

Ingredients Preparation

1 pound [454 g] chicken strips
1 teaspoon [5 mL] liquid chicken broth concentrate
1/2 lemon, juice and grated rind
1/2 cup [125 mL] old-fashioned whipping cream [35%]
2 tablespoons [30 g] grated Parmesan cheese [optional]
1 [10-ounce / 284-g] pack fresh fine herbs fettucine pasta noodles
2 cups [500 mL] small peeled carrot sticks



Into a large non-stick frypan, stir-fry chicken strips for approximately 7 minutes, until cooked through yet still tender.
Transfer into an oven-safe dish.
Drain melted fat from frypan before pouring in liquid chicken broth concentrate and lemon juice along with grated lemon rind.
Heat over medium heat.
Slowly stir in cream; reheat for 2 to 3 minutes.
Salt and pepper before pouring over chicken strips.
If desired, sprinkle all over with grated Parmesan cheese; brown under hot oven broiler.
Meanwhile, boil pasta noodles according to packaging directions; drain well.
Serve chicken strips along with pasta noodles, and carrot sticks.
