Smoked Turkey Rice Salad

Ingredients Preparation

1 cup [250 mL] white converted rice or brown rice
1/2 cup [125 mL] low-fat plain yogurt
1/4 cup [60 mL] light mayonnaise
1 1/2 teaspoons [7.5 mL] dried tarragon
1 teaspoon [5 mL] Dijon mustard
1/2 teaspoon [2.5 mL] pepper
1/2 teaspoon [2.5 g] sugar
1/4 teaspoon [1 mL] salt
2 thick slices [6 ounces / 170 g] smoked deli-turkey breast, cut in thin strips
1 cup [250 mL] frozen peas, boiled, drained then cooled completely
1 small tomato, chopped
1 small sweet yellow pepper, membranes removed and seeded, chopped
4 green onions, chopped

Cook white or brown rice according to package directions; set aside to cool.
Into a small bowl, whisk together yogurt, mayonnaise, tarragon, Dijon mustard, pepper, sugar and salt.
Into a large bowl, toss together cooled rice, turkey strips, cooled peas and chopped tomato, sweet yellow pepper and green onions.
Add yogurt dressing, toss gently until well coated.
